Are you needing to get in protein but don’t feel like eating eggs or sausage for breakfast? Here is an easy and delicious way to get in some protein!
What you need:
- 2 1/8 cup of gluten free oats (blended into flour)
- 1 scoop of protein powder; we have been using Just Ingredients
- 10 oz plain greek yogurt
- 3 eggs
- 2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup maple syrup
- 1 tsp vanilla
- 1 cup blueberries
- 4 oz applesauce (this is optional but helps to add moisture)
- coconut sugar (to sprinkle)
What to do:
Preheat your oven to 350 degrees. Mix your dry ingredients together first, reserving 1/8 cup of oat flour and berries. In a separate bowl, mix together the wet ingredients. Then combine the bowls and mix together well. Pour berries into a separate bowl and coat them with the extra flour, shaking until the berries are fully coated, then mix the berries into your muffin batter. Spoon the mixture into lined muffin tins or a silicone muffin sheet. Sprinkle a pinch of coconut sugar onto each muffin before baking. Bake for about 22-25 minutes or until a toothpick comes out clean!
